I feel like I have to preface my WIAW: What I Ate Wednesday post like almost everyone else does: I’m not sure who really wants to see what I ate, but I like looking at others’ posts so I might as well give it a try! Also, can we please take a moment to acknowledge how adorable the host Jenn’s baby of Peas and Crayons is?!? Okay, moving on.
The theme of this day’s meals: lack of being prepared. It all started with the morning when I was running late and didn’t have time to plan/make something for breakfast. That’s how I ended up traveling back to being ten years old and eating Cinnamon Toast Crunch for breakfast that I grabbed at the store on campus at work (that sounds confusing if you don’t know that I work at a school…okay that’s explanation enough :P ).
Now, I’m not saying Cinnamon Toast Crunch is only for ten year olds. No way, Jose. I’m just saying that I’m not the biggest cereal eater so the last time I had it was then. Wait…wait…now that I think about it, I remember convincing my mom I’d actually eat breakfast in high school if she got me Cinnamon Toast Crunch. Sometimes she’d have to give me a piece of cake just so I’d have something in my stomach before I went to school…I’m not the biggest easy-breakfast person. BUT I DIGRESS.
I was distracted all morning between being in a meeting and then catching up on work so I didn’t have a morning snack. Since I didn’t have time to make breakfast, I clearly didn’t have time to pack a lunch which meant that my co-workers and I headed to get pizza…oops? :P
But this isn’t just any normal pizza. It’s one of those pizza places where you decide what you want on it, like Chipotle-style. I made a pizza with red sauce, mozzarella and parmesan cheeses, chicken, bacon, green bell peppers, garlic, artichoke hearts, roasted red bell peppers, topped with arugula and pesto. YUM. The worker even said I made a good looking pizza, I win! Oh! and they had a super delicious blood orange lemonade. That picture looks kind of creepy…ANYWHO…
I was so over work and being stressed by the afternoon that I needed a pick me up snack! I almost went for cookies, but decided that’d just make me crash more and let’s be honest it isn’t the healthiest choice :P So I grabbed these cinnamon dried apples. The best part? The ingredients list: organic apples, cinnamon. That’s it! They were so good, too.
Before I left to go grocery shopping I saw a recipe on the Eat, Live, Run blog for asparagus pasta and it sounded good to me! So, that’s what I made for dinner.
Let’s be honest, her’s is prettier :P The only adjustments I made to the recipe were to use parmesan instead of feta and I added some lemon at the end. Oh! and I had a salad…with a lemon salad dressing…and those lemons were already on the counter, I didn’t even place them there on purpose…#lemonaddict
And that my friends is the long rambling explanation of how I ended up with unplanned meals to make up my WIAW!
